Happy Day is fully vegan and completely gluten-free. Along with their fresh-pressed juices they serve loaded waffles, toast, acai bowls, smoothies, and lattes. They commit to using local products whenever they can. Their bagels and bread are from New Cascadia Traditionals, their cashew cheese is sourced from Cultured Kindness, and they also sell Good Wolf Kefir and Camelia Grove Kombucha.
Destiny, owner of Happy Day, is from the small farming town of Orting, Washington. As an alumnus of Washington State University, she opened her first juice shop in Pullman, Washington. She started as doing pop-ups at farmers’ markets, yoga events, and school functions. She did pop-ups for 6 months before she had enough funds to begin her own shop. Destiny started inside Sanctuary Yoga on Main Street in Pullman and called her shop Main Street Squeeze.
After two years Destiny and her partner decided to move to Portland, a city they’d always loved, and what better place to continue doing what she was doing than Portland. This city definitely loves its smoothies, gluten-free goods, and healthy cafes! They planted themselves in the Beaumont community surrounded by Prince Coffee and Love Hive Yoga, two amazing local businesses!
Happy Day Juice Co. is bright and vibrant with its floor to ceiling windows and simple yet pleasing interior. It houses a couch and aesthetically pleasing and Instagram worthy plants and tables. They have board games and weekly movie nights!
The food is another story. You may think you have already been to a smoothie shop in Portland, so why another, but this one has food unlike you can find anywhere else. First, the waffles. If you are a waffle fan, then these are for you. While they are completely vegan and gluten-free, you would never know it. They have three options of toppings, all made to perfection and loaded with healthy goodness! The avocado waffle is the perfect savory waffle, but if you want something sweet, go for one of the fruit-topped options.
Happy Day also has toasts, smoothie bowls, smoothies, and of course juice! Their smoothies are large and made with fresh, quality ingredients. For a caffeine kick try the Ritual, made with bananas, coffee beans, almond butter, cacao nibs, dates, and oat milk. You could also warm up with a superfood latte!
